Since Memorial Day has come and gone, it is officially time for camping! Here in Montana, many people enjoy spending their weekends playing in the woods, swimming in the lake and sleeping in a tent or camper. Warm sleeping arrangements, extra water, closed-toed shoes and fire starter are all important pieces of a successful camping trip, but every camper knows that it’s the food that has the power to make the experience even more enjoyable. Here are some simple, delicious meals that you can make with Farmer Boy Eggs to enjoy while camping.

Breakfast

When you wake up to birds chirping and crawl out of your tent to smell the pines, you know it is going to be a good day. While we love scrambled eggs, a good camping trip needs something more exciting. Try this yummy camping french toast for breakfast, instead.

What you need to make it:

  • 1/2 lb. loaf of bread

  • 3 Farmer Boy Eggs

  • 1 c. milk

  • 2 tbsp. sugar

  • 1 tsp. cinnamon

  • 1 tsp. vanilla extract

  • 1/4 tsp. Nutmeg

  • 4 tbsp. butter

  • Your favorite french toast toppings

How to make it:

  • Cut the bread into 1 inch thick slices

  • Beat the eggs in a bowl large enough to fit a slice of bread. Then add the milk, cinnamon, nutmeg, vanilla and sugar. Mix thoroughly.

  • Heat the butter in a skillet over medium heat (this can be on a camp stove or fire)

  • Dip a slice of bread in the egg mixture and let it soak for a few seconds on each side. Let the excess drip off, sprinkle each side with additional sugar, and then toss it in the skillet to fry until golden on each side, about 3 minutes per side.

  • Repeat with each slice of bread, adding more butter to the skillet as needed.

  • Serve with your favorite toppings and enjoy!

Lunch

After breakfast, it’s time to play! Swimming in the lake and searching for huckleberries can take a lot out of you. That’s why we recommend having a pre-made option for your camping lunch. Check out this recipe for an egg salad sandwich that you can make ahead of time and throw in the cooler.

What you need to make it:

  • Your favorite bread

  • 8 Farmer Boy Eggs

  • 1/2 c. mayonnaise

  • 1 tsp. prepared yellow mustard

  • 1/4 c. chopped green onion

  • 1/4 tsp. paprika

  • Salt and pepper to taste

How to make it:

  • Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil and immediately remove the saucepan from heat. Cover and let the eggs stand in hot water for 10 to 12 minutes. Remove the eggs from hot water, let them cool, peel and chop them.

  • Put the chopped eggs in a bowl, and stir in the mayonnaise, mustard and green onions. Season the mixture with the salt, pepper and paprika.

  • Stir it all together, place the mixture in the middle of two slices of bread and toss in reusable sandwich bags to take with you.

What you need to make it:

  • Farmer Boy Eggs

  • Your favorite veggies

  • Ziploc quart freezer bags

  • Permanent marker

How to make it:

  • Grab a bag for each family member and label it with their name.

  • Crack eggs into each bag (typically 1 for little kids and 3 for adults).

  • Mix your favorite veggies into the egg.

  • At the campsite, boil water.

  • Drop the bags into the boiling water. Once the eggs have solidified and there is no liquid, your eggs are done!

Snack

Everyone knows that an arsenal of good snacks is essential to a successful camping trip. If you are looking for a way to get more nutrients into your snack options, hard-boiled eggs are the perfect solution. Here’s how to make them at home before you go:

What you need to make it:

  • Farmer Boy Eggs

  • Water

How to make it:

  • Place eggs in a single layer at the bottom of a saucepan and cover them with about an inch or two of water. The more eggs you add, the more water you need to have covering them.

  • Bring the water to a full boil.

  • Turn off the heat, but keep the pan on the hot burner. Cover the pan and let sit for 10-12 minutes.

  • Strain the water from the pan and quickly run cold water over the eggs to stop them from cooking further.

  • Toss them into a container and bring them with you!
