St. Patrick’s Day is a time often used to overindulge in all sorts of beverages and food. We like to call it the Thanksgiving of the Spring. And with the greenest holiday of them all coming up faster than we expected, it’s time to start planning some Paddy’s Day appropriate egg dishes to go alongside your green beers and cocktails.

Smoked Sausage Breakfast Hash

Our friends at Taste of Home know how to make the heartiest of meals and this hash is no exception. If you’re headed to a parade or just going out on the town, this is something to give you the energy for the day. And it only cooks in 25 minutes. 

The Creole seasoning gives it a little kick, the sweet potatoes provide some Southern charm and the spinach is a nice supply of iron. The key, of course, is getting those Farmer Boy Eggs perfect. Make sure you turn the heat down right after cracking them and don’t let the yok get hard.

Guacamole Deviled Eggs

So not exactly something you would equate with the Irish, but if you’re hitting a potluck and need something simple and green, you can’t go wrong with this Simple Recipes concoction.

Our eggs boil perfectly, so that’s the easy part. The guac takes the place of heavy mayo. They get devilish thanks to the jalapeno chili pepper. Make ‘em the night before, cover and get ready to have the most unique dish at the party.

Irish Eggs

We featured our favorite recipe for Grilled Scottish Eggs so to spread the love we needed to get this one on the board. This is a great Happy Hour snack (also known as a soaker) and can also accompany any entree.

Food.com knows how to cook them perfectly. The mashed potatoes are such a splendid thing to bite into as you approach the savory egg. Who wouldn’t want to indulge in something that combines Saltines and dijon mustard? Plus, the bonus is that you get to use our eggs twice, both with the mixture and with the center.

Ok, this one has nothing to do with St. Patrick’s Day. It’s just a requirement for the morning AFTER your Paddy’s adventures. The folks at Food Network have simplified to cut out any need for thinking. Make eggs, make bacon, add cheese, pick a hot sauce, feel better.

It’s that simple!
