Spring is a busy time. You might celebrate Easter or Mother’s Day and surely some family birthdays are thrown in there. This year, summer begins in the northern hemisphere on Saturday, June 20 and Father’s Day falls on June 21. After a busy spring of celebrations and holidays, make sure you still plan a time to celebrate the dads in your life! In case Father’s Day snuck up on you this time around, here are some of our favorite, last-minute egg recipes and a gift your dad will love!

Let’s Start with Some Simple Recipes

Whether you are enjoying a nice Father’s Day breakfast at home or a delicious, camping barbecue, here are a few great recipes to try!

For an easy, protein-filled breakfast, try out this omelet recipe from Delish.

What you will need:

  • 2 large Farmer Boy Eggs

  • Salt and black pepper

  • Red pepper flakes

  • 2 tablespoons of butter

  • 1/4 cup of shredded cheddar cheese

  • 2 tablespoons of freshly chopped chives

  • Any fillings you would like

How to make it:

  • In a medium bowl, beat eggs until no whites remain.

  • Add salt, pepper and red pepper flakes to taste.

  • Over medium heat, melt butter in a non-stick skillet.

  • Pour eggs into the skillet and tilt the pan so eggs fully cover the entire pan.

  • As the eggs begin to set, use a rubber spatula to drag cooked edges into the center of the pan, and then tilt the pan to let the uncooked egg fall to the edge of the pan. 

  • Once the bottom of the eggs is set, but the top is still a little wet, sprinkle the cheese, chives and other toppings over one half of the omelet. 

  • Fold the other side over the toppings and enjoy!

Serve these omelets with fresh-squeezed orange juice and some local toast!

If you’re still celebrating later in the day and are looking for a delicious barbeque side dish, try this Deviled Egg Macaroni Salad recipe by Jo Cooks.

What you will need:

  • 8 large hard-boiled Farmer Boy Eggs

  • 12 ounces of uncooked elbow macaroni

  • 1/4 teaspoon of both salt and pepper

  • 2 tablespoons of dijon mustard

  • 1 cup of mayonnaise

  • 3 medium dill or sweet pickles, chopped

  • 1/2 medium red onion, chopped

  • 2 ribs of celery, chopped

  • 1/2 cup of black olives, sliced

  • 1/2 teaspoon of smoked paprika

  • 1 tablespoon of chives, chopped

How to make it:

  • Cook the pasta according to the package instructions. 

  • Rinse the pasta well with cold water after straining.

  • Peel the eggs and cut them in half. 

  • Scoop out the egg yolks and set them aside in a bowl. 

  • Chop the egg whites into pieces.

  • Mash the yolks with a fork until smooth and seasoned with salt and pepper. Add mustard and mayonnaise. Stir until well combined

  • Assemble the salad in a large bowl and mix until evenly coated with the egg yolk dressing.

  • Garnish with smoked paprika, chives, and chill before serving.

Serve this recipe with a cold, local brew and a delicious burger.

  • Egg Carton

  • Scissors

  • Glue

  • String

  • Birdseed

How to make it:

  • Carefully cut the lid off of the egg carton.

  • Cut holes into all 4 corners of the carton.

  • Cut two pieces of string, about a foot long each.

  • Tread the string through the holes diagonally, and tie the ends into knots over the corners.

  • Use a dab of glue on each knot for extra security.

  • Add the birdseed and place it on a tree or hook outside.
